You can't go wrong with baked apples, the quintessential fall fruit. There's something so comforting and nostalgic about the apple crumble and it's probably the only dessert I can make. Although I consider myself a decent cook, I just can't bake. I've always had tremendous respect for pastry chefs. I think baking is a harder skill than cooking. With cooking, I don't have to have the precise measurements, I can wing it. With baking, everything have to be exact and it's very hard to fix mistakes.
I love this recipe because it's so versatile (you may replace it with peaches, berries, plums, strawberries, pears, apricots). I love the crisp and topped with a scoop of vanilla or maple walnut ice cream, I'm a happy camper! :D
Ingredients:
6 cups of apples peeled, cored and sliced (about 6 medium sized apples)
1/3 cup sugar
1 tbsp flour
1 tbsp grated lemon zest
1/2 tsp cinnamon
pinch of nutmeg (optional)
Oat Crust:
1/2 cup butter, softened at room temperature
1/2 cup brown sugar
1/2 cup flour
1 cup rolled oats
To make crisp: Place prepared fruit in a baking dish. Combine sugar, flour, lemon zest, cinnamon and nutmeg. Add to fruit and toss to coat.
To make crust: Mix crust ingredients with your hands until crumbly. Sprinkle over fruit mixture. Bake at 350ºF for 45 minutes until crisp is bubbling. Serve with ice cream.
